Vanilla Rose Icing on Honey Cupcakes

Ingredients:

  • 1.5 cups all-purpose flour
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1 cup sugar
  • 2 large eggs, at room temperature
  • 1/4 cup honey
  • 1 tablespoon vanilla extract
  • 1/2 cup whole milk

Steps:

  1. Preheat oven to 350 degrees.
  2. In a bowl designated for dry ingredients, add flour, baking powder and salt.
  3. In another bowl beat together unsalted butter, and sugar until well combined.  Add in eggs and beat.
  4. Beat in 1/4 cup of honey as well as vanilla extract.
  5. Alternate between adding flour mixture in thirds and milk, beating between additions. 
  6. Line your cupcake tray with cupcake paper cups, and fill abotu 3/4 full.
  7. Bake for 20 minutes or until cake tester (toothpick comes out dry).
  8. Allow to completely cool before icing!

 



1. Add flour, baking powder, and salt into large bowl, whisk together.



2. In a separate bowl, add butter and sugar, and cream together with mixer.



3. Add eggs one at a time to butter/sugar mixture and beat together well.




4. Add honey, and vanilla into butter/sugar mixture and beat until well combined.



5. Add your flour in thirds, alternating in with milk and beating with mixer just until blended between additions.



6. Scrape down sides with spatula and blend once more to ensure everything is well combined

7. Line your cupcake tray with paper liners. Fill 3/4 full with your cake batter.


8. Bake for ~20 minutes or until cake tester comes out clean.

9. Allow to cook completely before icing!


10. I decided to make it so I could add a filling to the cupcakes. Take a piping tip, turn it upside down and use it to carve out a circle through the cupcake:



11. Pipe in icing or scoop in icing with a spoon. You can also use chocolate mousse, cream, lemon curd, chocolate ganache or other items for filling other than icing.


12. To create a "rose" on top of the cupcake, use "1M Wilton Tip",  while squeezing the piping bag create one swirl starting from the center, in a circular motion moving outwards. 


13. You can also make "Hydrangea Cupcakes" by "2D Wilton Tip" by squeezing a generous amount of icing on the edge of the cupcake, go circular and make your way in. Keep flowerettes close to each other.
