S'mores Thumbprint Cookies

Easy to make s'mores thumbprint cookies. Honey & cinnamon in the cookie, with delectable melted marshmallow & melted semi-sweet chocolate drizzled on top. This will be a big hit at any holiday party!


Ingredients

  • 1 cup unsalted butter (room temperature)
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • 18 jumbo marshmallows (just slightly large in diameter than the size of your thumb) cut in half
  • 100g (or 3.5 ounces) semi-sweet chocolate, melted

Steps

  1. Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius)
  2. In a large bowl, beat together butter and sugar until well combined. Add honey and vanilla, set aside. 
  3. In another bowl, whisk together flour, cinnamon and salt. 
  4. Add the flour mixture to the butter/sugar mixture and beat until well combined. 
  5. Take a tablespoon and scoop out cookie dough, roll into balls and place on cookie sheet. Use your thumb to make an indentation in the middle. Bake the cookies for 15 minutes. 
  6. Remove cookies from oven, next place marshmallow halves in the indentations. Put the cookies (with marshmallows) back in the oven for another 3 minutes. 
  7. In a double boiler, melt 100g of chocolate and place into piping bag with circular tip (or cut a minuscule hole in the corner of a sandwich bag). Drizzle melted chocolate in a zig zag pattern over your cookies. Allow to completely cool before serving!

1. Add butter and sugar into a bowl. 

2. Beat until well mixed.

3. Add honey, and vanilla extract to the butter/sugar mixture.


Beat until well mixed.


4. In a separate bowl, add flour, cinnamon and salt. Then whisk together.



5. Next add flour mixture to butter mixture.

Beat until well mixed.


6. Use 1 tbsp to scoop out cookie dough.



7. Roll the cookie dough into a ball and place on cookie sheets lined with parchment paper.

 8. Use your thumb to create an indent/well in the center of the cookies.


9. If you see cracks in the cookies, pinch the sides together and smooth.


10. Bake for 15 minutes.



While your cookies are baking, cut your marshmallows in half.


9. Once the cookies are done, place your one marshmallow inside each cookie well.


10. Next, place your cookies once again into the oven until the marshmallows puff up (approximately 3 minutes).


11. While your marshmallows are cooking, we are going to melt our chocolate in a double boiler. Boil some water under medium heat, and place chocolate in bowl above. Mix as it melts.


12. If you have a small circular piping tip, cut a hole at the end of a pastry bag or sandwich bag and place the tip through. Or cut a minuscule hole at corner of the bag. Transfer chocolate into bag using a spatula.


13. Once your cookies are done baking, remove from oven and drizzle your melted chocolate over the cookies. Allow the melted chocolate to cool before serving (it gets sticky!). And voila! You are done!
