Ingredients
- 4 Bell Peppers (Red, Green or Yellow)
- 4 eggs
- Diced Veggies: Bell Peppers, Tomatoes, Mushrooms
- Olive Oil
- Salt and Pepper to taste
- Optional: Diced Bacon or Sausage Bits, cheese
Steps
- Preheat oven to 400 degrees F.
- Slice Bell Peppers in half, cleaning out inside and boil in water for 3-5 minutes. Remove from water. Place in baking dish lined with aluminum foil and set aside to dry.
- In medium heat skillet, add olive oil and sauté your diced veggies (bell peppers, tomatoes, mushrooms). Sauté for a few minutes.
- Add mixed egg mixture and scramble.
- Optional: Add diced bacon or sausage bits and mix well together.
- Add salt and pepper to taste
- Once complete stuff your bell peppers with the scrambled egg mixture.

4. In a separate clean bowl, scramble those eggs!
5. Pour the eggs into your skillet, and then proceed to scramble:

7. Optional: At this step add bacon or sausage bits.
8. Now take your scrambled egg mixture and stuff your bell peppers.
Optional: Add low-fat cheese on top:
