
Ingredients
- 3 chicken breasts - chopped and cooked
- 5 tomatoes - diced or 2 cans of diced tomatoes
- 1 can whole kernel corn (whole), drained (8 ounces)
- 1 small onion diced
- 2 garlic gloves - minced
- 1 can (16 ounces) black beans
- 1 can (16 ounces) kidney beans
- 1 tablespoon tomato paste
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 tablespoon chipotle seasoning
- Optional: 1/2 cup shredded cheese on top
Steps:
- To prepare the chicken heat a skillet on medium heat, add some cooking oil and toss chicken cubes in. Cook each side approximately 7 minutes or until white/opaque. Cover while cooking so the chicken does not dry out.
- In your crockpot/slowcooker, toss in all of the ingredients except for cheese, including - chicken breasts (chopped), diced tomatoes, minced, black beans, kidney beans, tomato paste, chili powder, cumin and chipotle seasoning.
- Cook on high for 2 hours or low for 4 hours.
- Serve, add cheese on top.

1. Take 3 chicken breasts and chop into cubes.
2. Heat up a skillet to medium heat that has been drizzled with some cooking oil, and cook the chicken. Cover the chicken so it doesn't get dry.
3. Flip after ~ 7 minutes and cook until chicken is white/opaque. Set the chicken aside.
4. Next, prepare your ingredients and place inside your crockpot. I opted to use fresh, diced tomatoes:
5. Add your diced onions and minced garlic cloves:
6. Drain the black beans and add to your crockpot.
7. Drain the kidney beans and add to your crockpot.
8. Drain the kerneled corn and add to your slow cooker:
9. Add the cooked chicken.
10. Add the tomato paste, chili powder, chipotle and cumin powder.
11. Next, take the time to mix your ingredients.
12. Cover, and cook on high for 2 hours or cook on low for 4 hours.
