Ingredients
- 2 cups of large shell pasta (* whole grain pasta)
- 2 cups shredded cheese of choice
- 1 tomato, diced into cubes.
- 1/2 cup plain Greek Yogurt
- 1/2 cup skim milk (or almond milk, unsweetened)
- 1/4 tsp paprika
- 1 tsp dried basil
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper to taste.
- 1 cup baby spinach
Instructions
- Boil pasta for 7-8 minutes or until desired tenderness. Drain and set aside.
- In a separate mixing bowl, add Greek Yogurt, milk, paprika, basil, garlic powder, and onion powder. Whisk together.
- Add 2 cups of shredded cheese.
- In a heated pot (use the one you used to boil pasta), add drained pasta and your Greek Yogurt mixture. Mix around to allow the cheese to melt.
- In a separate heated pot, add a little bit of water, bring to a boil and add spinach. Allow the spinach to wilt and then remove. Mix with pasta.
- Garnish with (more) cheese. You may Serve with diced tomato on top.
