Mocha Chocolate Crackle Cookies

This is another wonderful recipe from Canadian Living. This cookies are a little bittersweet and very different than the other cookies I have baked in the past. This were delicious and a GREAT recipe if you love the bittersweet taste of dark chocolate.




Yields: 30 cookies

Ingredients

  • 1/4 cup butter
  • 57 g of semi-sweet chocolate
  • 3 tbsp of brewed coffee
  • 1 egg
  • 1/4 cup brown sugar
  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup icing sugar

Steps

  1. Over a saucepan of hot water, in heatproof bowl melt butter with chocolate and stir. Add coffee and stir, set aside.
  2. In a separate bowl, add egg and sugar and beat until thickened. Beat in the chocolate mixture.
  3. In a separate bowl for dry ingredients, add flour, cocoa powder, baking powders and salt. 
  4. Add the flour mixture to the chocolate mixture in two additions and mix together well. Cover and refrigerate this batch for 1 hour. 
  5. Preheat oven to 325 degrees Celsius 
  6. Roll cookie dough into 1 tbsp balls and coat cookie dough generously in icing sugar. Place on ungreased cookie sheet. 
  7. Place in oven and bake until cracked for 14 minutes. 





1. Heat some hot water in a sauce pan.


2. In a heat resistant bowl, add butter and Baker's chocolate. 


3. Place heat resistant bowl on top of the sauce pain with heated water and melt. 


4. Mix together while it melts. 


5. Add brewed coffee to the butter and chocolate, take the bowl off heat and set aside. 


6. In a separate bowl, add brown sugar and eggs.


7. Beat together until light and fluffy:



8. Add the heated butter/chocolate/coffee mixture to the sugar/egg mixture and beat together until well combined. 



9. In a third bowl designated for your dry ingredients, add flour and cocoa powder:


10. Add baking powder and salt:


11. Whisk together your dry ingredients:


12. Add flour mixture to chocolate mixture in TWO additions, beating between additions:


13. Until you get this consistency of your batter and then refrigerate for 1 hour. 


14. Preheat your oven to 325 degrees celsius. Take the cookie dough batter out of the fridge after 1 hour.


15. Scoop 1 tablespoon of cookie dough:


16. Roll into a cookie ball:


17. Roll in a tray of icing sugar, coat the cookie dough very generously!


18. Lay two inches apart on ungreased cookie sheet (parchment paper)



19. Bake at 325 degrees Celsius for 14 minutes until they crack.
